Red White and Yum Skewers

Happy Monday! Can you believe that today is the last day of June!? July is by far my favorite month of the year.  Probably because it’s BBQ season!!! Olivia and I thought it would be fun to share with you some of our favorite BBQ recipes.  So, this week is “Fourth of July Themed BBQ Recipe Week”! We’ll be posting a new, delicious BBQ recipe every day leading up to the Fourth! Today is a simple, yummy appetizer that Olivia likes to call “Red, White, and Yum Skewers”.  Enjoy!!




  • 30 cherry tomatoes
  • 30 small balls mozzarella cheese
  • 1 can roasted red peppers cut into small pieces
  • Salt and pepper

Infused Olive Oil

  • 1 cup olive oil
  • 1 garlic clove cut into fourths
  • 3 fresh basil leaves




  • Using a skewer, spear a tomato, a mozzarella ball, and a roasted red pepper.  Repeat with remaining ingredients.  (Tip: Each skewer should end up with 3 of each ingredient!)
  • Place on serving dish, drizzle with olive oil, and sprinkle with salt and pepper
  • Serve with a side of Infused Olive Oil!

Infused Olive Oil

  • Heat olive oil in a non-stick frying pan over medium heat
  • Add garlic and basil and cook 3-5 minutes (or until it is fragrant but not colored)
  • Remove from heat and let sit for 1 hour
  • Pick out garlic cloves before serving
