Raspberry Spinach Salad

Summer is not over yet! Here is a yummy and refreshing summer recipe for a Raspberry Spinach Salad with Ginger Raspberry Vinaigrette dressing.  It is super yummy and packed with tons of nutrients.  Both Dempsey and I love raspberries and luckily they are one of the healthiest things you can put into your body!  I thought it would be fun to come up with a dish in honor of this very small superfood!

Ingredients:

Dressing

  • ½ cup thawed frozen raspberries
  • ¼ cup olive oil
  • 2 tbs lemon juice
  • 1 tbs honey
  • 2 tsp graded ginger

Salad 

  • 4-5 cups raw baby spinach
  • 1 cup fresh raspberries
  • 2 clementines, peeled
  • 2 oz goat cheese
  • ½ cup chopped roasted almonds
  • ¼ cup red onion thinly sliced

Directions:

  • In a blender, combine thawed raspberries, olive oil, lemon juice, honey, and graded ginger and blend until smooth. (Tip: Use a cheese grader to grade the ginger!)
  • Combine spinach, goat cheese, clementines, raspberries, almonds and onion in a mixing bowl
  • Just before serving, add dressing and toss until ingredients are coated
