Mediterranean Quinoa

Ingredients:

  • 1 cup uncooked quinoa
  • 2 cups water
  • ½ red onion, diced
  • 1 green pepper, diced
  • 1 tomato, diced
  • ½ cucumber, diced
  • ½ cup chopped fresh parsley
  • 1 cup crumbled feta cheese
  • 3 tbs fresh lemon juice
  • ¼ cup olive oil
  • Salt & pepper

Directions:

  • In a small saucepan, bring water to a boil
  • Stir in quinoa, 1 tsp salt and 1/4 tsp pepper, reduce heat to medium-low, cover, and simmer for ~15-20 minutes, or until water has been absorbed
  • Transfer quinoa to a bowl and refrigerate for ~30 minutes, or until cool
  • Stir onion, green pepper, tomato, cucumber, parsley, feta cheese, lemon juice, and olive oil into cooled quinoa
  • Season with salt and pepper
  • Refrigerate until ready to eat!
