Lemon Cupcakes with Avocado Frosting



  • 1 ½ cups whole wheat unbleached flour
  • 1 cup all purpose flour
  • 1 tsp baking powder
  • 2 tsp baking soda
  • 2 eggs
  • ¾ cup sugar
  • 1 tbs honey
  • ½ cup unsweetened vanilla almond milk
  • ½ cup fat free vanilla Greek yogurt
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • Zest and juice of one lemon


  • 2 large avocados
  • 2 ¼ cup confectionary sugar
  • 1 tsp vanilla



  • Scoop out the insides of the avocados
  • Using an electric mixer, blend avocados until smooth
  • Add sugar and vanilla and mix well
  • Refrigerate icing for one hour before icing the cupcakes
  • Keep refrigerated until ready to serve


  • Preheat oven to 350 degrees Fahrenheit
  • In a small bowl, whisk together flours, baking powder, and baking soda
  • In a medium bowl, whisk together eggs, sugar and honey.  Add almond milk, Greek yogurt, vegetable oil, and vanilla and mix well
  • Squeeze and zest one lemon and add it to the wet ingredients
  • Add the dry mixture to the wet mixture and gently whisk together.  Be sure not to over-mix!
  • Line a cupcake pan with 15 cupcake liners.  Fill cupcake liners with batter until ¾ full
  • Bake for 15 to 18 minutes or until golden brown
  • Cool and then frost!
