Cranberry Orange Walnut Holiday Granola

My Cranberry Orange Walnut Holiday Granola is not only a tasty holiday treat, but it is also a simple and cheap homemade holiday gift!  Package it in a mason jar, add some ribbon and a cinnamon stick (if you’re feeling adventurous), and, voila, you have a thoughtful and delicious gift to give your friends and family!

  • 2 cups rolled oats
  • 1 cup chopped walnuts
  • 1/2 cup unsweetened, dried coconut flakes
  • 1/2 cup pumpkin seeds
  • 1/2 cup maple syrup
  • 2 tbs coconut oil (Tip: Microwave coconut oil for 30 seconds to soften. Vegetable oil is also an alternative.)
  • 1/2 cup dried cranberries
  • The juice and zest of ½ orange
  • ½ cup dried cranberries

  • Preheat oven to 300 degrees Fahrenheit
  • In a large bowl, mix together oats, walnuts, coconut flakes, pumpkin seeds, maple syrup, coconut oil, juice of half an orange, and orange zest
  • Spray a baking sheet with a non-stick cooking spray
  • Spread ingredients evenly on baking sheet
  • Bake in preheated oven for 30 minutes, or until granola is golden brown, stirring once halfway through
  • Cool, then stir in cranberries
  • Serve with yogurt, fruit, or even over ice-cream!
  • Store in an airtight container (This recipe makes about 2-3 gifts!)
