No Bake Peanut Butter Granola Bars


Granola bars are a necessity in a hectic lifestyle. They are quick and easy and provide a ton of nutrients. Unfortunately, many of  the bars for sale are processed and filled with extra calories, sugar, and fat.  Rather than sifting through hundreds of different brands, comparing nutrition facts, and finding a flavor you enjoy, why not try making them yourself?  Making your own granola bars allows you to control what goes into them and how they taste.  AND you’ll be saving money!  Do NOT be intimidated!  Try it out and let me know what you think!


  • 1 cup dried figs
  • ¼ cup pumpkin seeds
  • 1/4 cup dried unsweetened coconut
  • 1/2 cup chopped almonds
  • 1 ½ cup oats
  • 1/2 unsweetened peanut butter
  • 1/4 cup honey


  • Soak figs in warm water while prepping dry ingredients
  • Stir oats, almonds, shredded coconut, and pumpkin seeds in a large mixing bowl
  • Drain figs and blend in a food chopper  (Tip: The mixture will be a thick, sticky consistency)
  • Microwave peanut butter and honey for 30 seconds or until soft and easy to stir
  • Add figs and peanut butter honey mixture to the dry ingredients
  • Line a 9×7 inch baking pan with wax paper
  • Press mixture into pan and spread evenly
  • Using another piece of wax paper, press down on the mixture, packing the ingredients tightly
  • Freeze for 20-30 minutes and slice into 8 granola bars.  Enjoy!
